IF frozen, thaw in fridge. Heat oven to 450F/230C. Place pork on a foil-lined, rimmed cookie tray; season with salt & pepper; drizzle with canola oil or coat with non-stick spray. Roast 20-25 min. OR until done (internal temp. 160F/71C). Tent with foil, let rest 5 min. Empty sauce into a small pot; bring to a boil over medium heat. Cook, whisking occasionally, 3- 5 min, adding any juices from cooked pork. Reduce heat to medium-low. Whisk in vinegar & butter; cook about 3 min. Slice pork and drizzle with sauce. Suggested Sides: SupperWorks mashed potatoes.
