(grill): Allow Butter and steak to sit at room temp. approx. 30 min. Sprinkle both sides of steak, with salt and fresh-ground pepper. Grill, on medium-high, to desired doneness (135F/57C is medium rare), about 2-3 min. per side. Remove from heat and top with a dollop of Brandy-Garlic Butter. Tent loosely with foil and let rest 5 min. before serving.
