Boneless, skin-on chicken thighs chicken, red onion, tomato sauce, tomato juice, water, yogurt, paprika, garlic powder, parsley, onion flakes, pepper, hot sauce, cauliflower rice.
(stovetop): Cook cauliflower rice from frozen. If frozen, thaw Chicken in fridge. Heat 1-2 Tbsp. oil in a frypan over medium-high heat. Brown chicken (& onion) for about 3 min. per side. Add tomato juice mixture, cover. Reduce heat and simmer, stirring occasionally, about 15 min. or until cooked through (internal temp. 165F/74C). Remove from heat. Remove chicken pieces from pan. Let sauce cool slightly then stir in yogurt. Serve sauce over chicken and cauliflower rice.
