(oven): If frozen, thaw completely in refrigerator. Let roast sit at room temp. for 2 hours before cooking. Preheat oven to 450F/230C. Unwrap prime rib and place in a roasting pan, fat side up (discard foil pan). Sprinkle all over with Montreal Steak Spice (included). Roast, uncovered, 15 min. Turn oven temp. down to 325F/163C. For medium rare, continue roasting approx. 2 hours, OR until cooking thermometer registers 125F/52C. Remove from oven and let sit 15-20 min. before carving. Serve with Au Jus and Horseradish Sauce.
