IF frozen, thaw in fridge. Brown chicken in olive oil over medium-high heat, approx. 6 min. per side. Add 3 c. water and concentrated chicken stock. Bring to a boil (SPLIT orders add only 1 1/2 c. water). Reduce heat. Simmer, covered, 15 min. Add mint and olives. Continue cooking, covered, approx. 5 min, OR until done (internal temp. 165F/74C). Remove chicken to a platter; tent with foil to keep warm. Bring remaining broth to a boil. Add couscous. Stir. Remove from heat, cover and let stand 5 min. Suggested Sides: Our Warm Kale Krunch.
