Thaw completely in refrigerator. Position an oven rack in your 4-6 inches from broiler and heat on high. Meanwhile, heat 1 Tbsp. olive oil in an oven-proof skillet (about 10diam.) over medium heat on top of stove. Set aside extra parmesan cheese. Pour in egg mixture and reduce heat to low. Cook, giving the eggs a few stirs to distribute ingredients, until eggs are well set and slightly puffed around edges but still loose in the centre, about 15-18 minutes. Remove skillet from stove and sprinkle on reserved cheese. Slide pan under broiler and cook until frittata is puffed, browned and set in the middle, another 5-10 minutes. Let cool 5 minutes. Cut into wedges and serve hot or at room temperature. Suggested Sides: Green salad tossed lightly with oil and vinegar for a lighter meal. Add some pan sauted diced potatoes for a heartier meal. Split orders: Use smaller skillet and watch carefully!
